🗓️ Update of April 17, 2025
As announced in preview on our website in September 2024, SBM has just officially confirmed the arrival of the famous pastry chef Cédric Grolet at the Hôtel de Paris. A tea room and boutique will open in the summer of 2025 in the hotel's patio, where Grolet will also serve as executive pastry chef. An exclusive creation dedicated to Prince Albert II is also announced.
In September 2024, we already mentioned the imminent installation of Cédric Grolet in the inner courtyard of the prestigious Hôtel de Paris in Monaco. He was then approached to take over the location left vacant by the concept store Taera Monte-Carlo, which had just closed its doors on August 31, 2024. This information, which was not confirmed at the time, has since been validated by SBM itself.
According to the announcement relayed by Monaco-Matin, the multi-award-winning chef will inaugurate a tea room with a sweet and savory offer, inspired by his Parisian establishment on rue de l'Opéra. The space will have 36 covers indoors and about sixty on the terrace, offering a gourmet experience throughout the day. An adjoining shop will showcase its iconic creations, including its famous trompe-l'oeil fruits. The icing on the cake: an exclusive creation for Prince Albert II will be unveiled on this occasion.
On August 31, 2024, the ephemeral restaurant Taera Monte-Carlo bowed out after a year of activity in the central peristyle garden of the Hôtel de Paris. This place, run by Venezuelan chef Victoria Vallenilla, offered a cuisine inspired by her native country, in a warm and colorful atmosphere.
This closure foreshadowed the arrival of a new large-scale project. It's now official: Cédric Grolet will transform this space into a new temple of luxury pastry, adding a new dimension to the gastronomic offer of the Monegasque palace.
On August 31, 2024, Taera Monte-Carlo, the ephemeral concept store restaurant, closed its doors after a year of activity at the Hôtel de Paris in Monaco. This restaurant, run by Venezuelan chef Victoria Vallenilla, offered an immersive dining experience centered on the traditional cuisine of her country, revisited with a modern twist. Housed in the hotel's inner courtyard, also known as the Central Peristyle Garden, Taera stood out for its vibrant and warm decoration, in harmony with the Venezuelan cultural richness.
Vallenilla, who had already proven himself as executive chef of COYA Monte-Carlo, had managed to create a unique culinary space in Monaco, making an impression with iconic dishes such as arepas and pabellón criollo. However, after delighting customers' taste buds for a year, the restaurant has completed its journey, freeing up a strategic location in the heart of one of the principality's most prestigious hotels.
Cédric Grolet, born in 1985 in Firminy, France, is now recognized as one of the greatest pastry chefs in the world. His remarkable career began at an early age when he became interested in pastry. After training in pastry at the École Nationale Supérieure de la Pâtisserie, he honed his skills in several prestigious establishments, including the Relais Dessert.
His career took a decisive turn when he joined the team of the restaurant Le Meurice in Paris in 2012, under the direction of chef Alain Ducasse. There, he was quickly promoted to pastry chef, where he distinguished himself by his innovative creations, combining aesthetics and taste. Grolet is particularly famous for its "sculpted fruits", pastries that perfectly imitate the appearance of real fruit, but reveal complex and refined flavors when tasted. This meticulous attention to detail and ability to surprise the taste buds has earned him worldwide recognition.
In 2018, Cédric Grolet opened his first boutique in Paris, Cédric Grolet Opéra, located on rue de l'Opéra. This place quickly becomes a landmark for pastry lovers, where each creation is a work of culinary art. In 2019, it continues its expansion with the opening of another boutique in Le Meurice, thus strengthening its presence in the luxury pastry industry.
Grolet has been awarded several times for his outstanding work. In 2015, he received the award for Best Pastry Chef of the Year by the Gault & Millau guide, followed in 2017 by the title of Best Pastry Chef in the World at the World's 50 Best Restaurants ceremony. In 2018, he was crowned Pastry Chef of the Year by Le Chef Magazine, cementing his status as a pastry superstar.
Cédric Grolet is also an accomplished author, having published several pastry books that share his innovative approach and unique techniques with a wider audience. Its philosophy is based on the exaltation of the natural flavours of the ingredients, limiting the use of sugar to favour the authenticity of the tastes.
We announced it in September 2024: the arrival of Cédric Grolet in Monaco was only a matter of time. Today, it's official. The famous pastry chef will open a tea room and a shop on the patio of the Hôtel de Paris in the summer of 2025, according to a confirmation from SBM relayed by Monaco-Matin. This news confirms the rumors that we had revealed several months earlier.
Moving to Monaco, and in particular to the Hôtel de Paris, is not a trivial choice for this world-renowned pastry chef. This strategic location will provide an exceptional showcase for his creations, attracting an elite clientele in search of unique gastronomic experiences. The place will accommodate 36 covers indoors and about sixty on the terrace, with a sweet and savory menu offered from breakfast to tea time. In the window of the adjoining boutique: its emblematic trompe-l'oeil fruits and an exclusive creation designed for Prince Albert II, especially for this opening.
This movement also marks a significant rapprochement between Cédric Grolet and Alain Ducasse, one of the most influential figures in world gastronomy. Alain Ducasse has been firmly established in Monaco for decades with his three-starred restaurant Le Louis XV, also located at the Hôtel de Paris. The Louis XV is renowned for its refined Mediterranean cuisine, which celebrates the local products of the Riviera with unparalleled precision and elegance.
Grolet and Ducasse know each other well, as Grolet worked under Ducasse's direction when he was pastry chef at Le Meurice restaurant in Paris. This experience was foundational for Grolet, allowing him to develop his creative vision while respecting the standards of excellence of haute cuisine. Their professional relationship, marked by mutual respect and recognition of their respective talents, paves the way for potential synergies in Monaco. Now executive pastry chef of the palace, Grolet reunites with Ducasse in an emblematic house, conducive to creative exchanges and joint projects.
Monaco, with its unique blend of luxury, tradition and innovation, will offer Cédric Grolet a field of expression that matches his ambitions. The Principality is not only an international crossroads for gourmets, but also a place where gastronomy is celebrated in all its forms. Grolet will be able to draw Mediterranean inspiration from it, work with local products of exceptional quality, and explore new pastry paths in an environment where excellence is the norm.

Located in the heart of the Principality, on the Place du Casino, this iconic hotel was inaugurated in 1864 and has since welcomed the world's greatest figures. Recently, the hotel underwent a complete renovation, a major transformation that lasted four years and was completed in 2019. This renovation has made it possible to modernize its facilities while preserving the charm and elegance for which it is renowned.

The Grill's kitchen, led by a talented chef, offers grilled meat and fish of exceptional quality, with an approach that combines tradition and modernity.
The wine cellars of the Hotel de Paris in Monaco, which are among the most impressive in the world, also distinguish this establishment from the others. Established in 1874, these cellars house a collection of over 350,000 bottles, making this place a treasure trove for wine lovers. The cellars of the Hotel de Paris are an invaluable heritage, home to some of the oldest and rarest bottles, with a selection that covers all the major wine regions of the world. They play a key role in the hotel's gastronomic experience, allowing for food and wine pairings of unparalleled precision and diversity.
The arrival of Cédric Grolet at the Hôtel de Paris reinforces the attractiveness of this already prestigious establishment. Known for its ability to attract the greatest culinary talents, the Hôtel de Paris became the new field of expression for Grolet, who deployed all his pastry know-how in an environment where excellence was the norm.
